Mini Puff Pancakes

Show of hands… who here has heard of a Hootnanny? German pancake? Puff pancakes?? Anyone?…………..

If you raised your hand… you must be from Utah. I’ve traveled all over the country, and had not heard of these until I moved here. Normally, you’d bake these in a huge 9×13 pan, and end up with one giant-over-the-edge pancake. But it is always way too much for my family to finish! I saw this super cute idea to make a mini version over at Gimmie Some Oven, and decided to give it a try. Well, with a few minor adjustments to the recipe.


Start out with your ingredients…..


1/2 C. milk
1/2 C. flour
3 large eggs
2T. melted butter
1/2 t. vanilla extract
1/2 t. orange extract
Plus butter for the oan

Toss the flour, milk, eggs, extracts, and butter into a blender.

Turn that sucker on, and puree until there are no lumps remaining.

Place small daps of butter in the bottom of each muffin cup. Place in the oven, then turn it on to 400 degrees.

Once the butter starts to melt, pull out your pan. Fill each cup about 1/2 full with batter. Bake for 15 minutes. Don’t worry if it starts to look like the batter is raising too much. That is a good thing. It will flatten out when you pull them out of the oven.

When you are ready to eat you have a few choices…

1. fill with fruit preserves of some sort…


2. Lather them with syrup or powdered sugar.

I always go with the syrup. I’m not much of a fruit on your pancakes kind of person. Plus, with the orange in these, it makes me feel like adding more fruit flavor would ruin the whole experience. But who am I to judge?

    This is so smart. .The best part is the edges, and this way the WHOLE thing is edges!!
