I’ve said this a hundred million times… but we are veggie eaters. Like… 90% of our recipes include multiple vegetables. We aren’t really health nuts… I mean, we eat tons of cookies/brownies/cakes… but tend to accidentally be awesome to our bodies and load them up with our daily count of greens.
That is why when I saw this recipe I knew I needed to make my own version. They had the beginning of a great pizza… I just made some adjustments to their base!
- favorite pizza crust
- 4 T. sun dried tomato pesto
- 1 clove garlic
- 2 T. melted butter
- 2 T. olive oil
- 1/4 C. shredded parmesan cheese
- fresh spinach
- sliced tomato
- thinly sliced red onion
- 1/4-1/3 C. feta cheese
- Combine the pesto, garlic, butter, oil, and parmesan into a small bowl. Mix well. Spread over your prepared crust.
- Top with your fresh spinach, tomato, onion, and feta. Bake according to the crust recipe.

This combines so many great ingredients. Most of which you can get local at a farmers market or right from your garden! Like most of my recipes, this is VERY adaptable. You can change the toppings to fit your specific tastes, and even add or take away ingredients to the sauce. I personally love this pie with a thin crust. The layer of crunch adds a bit of texture that just sends the entire recipe over the top!
Try using my homemade sun dried tomato pesto! It’s not easy to find that stuff in the store!
