I recently became the owner of a Black & Decker Flip Waffle Maker (thank you hubby) and boy have I been putting it to good use! It all started with the recipe I’m Topsy Turvy has on her site for Liege Waffles followed by the Cinnamon Waffles from yesterday, and now here are these things. Chocolate waffles. Waffles that someone has been begging for ever since this machine came home. Because apparently chocolate is high on the priority list for a four year old?! Who knew??
After a few failed attempts I finally found a recipe that really does work well for me and my family. It’s got a slight chocolate taste without an overload of added sweetness. If you are looking for a wham bam punch of chocolate… I suggest adding a cup of mini chocolate chips to the batter before you cook these up. We love them as is with a few sliced strawberries and occasionally some whipped cream.
- 1-1/2 cups flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 cup sugar
- 1/2 cup cocoa powder
- 1 teaspoon vanilla
- 1 cup milk
- 2 eggs, divided
- 1/2 cup butter, melted
- Preheat your waffle iron. Whisk together the flour, baking powder, baking soda, sugar, and cocoa. Set aside.
- In a large measuring cup combine the vanilla, milk, egg yolks, and butter. Stir into the dry ingredients until fully incorporated.
- Whip the egg whites until peaks form. Fold into your batter. Pour the mix into your waffle iron and cook until golden brown.
These are not too rich, but still have that great cocoa flavor. Next time I might try adding bananas. I’m not sure what it is about that fruit, but ever since I made those Chunky Monkey Pancakes no breakfast seems complete without them!
