People!! It is officially PUMPKIN season which means there is about to be a ton of fall baking going on in our house. I decided to jump right in with one of our all time favorite ways to start the day. This sweet pumpkin French toast fills your home with the wonderful smell of the flavor we all love so much. Just hearing it sizzle as it is frying in a puddle of melted butter warms my heart. It is sure to pull the entire family out of bed and into the kitchen. Drizzle with a little maple syrup or powdered sugar and fall in love with the melt-in-your-mouth goodness.
- 3 large eggs
- 1/2 cup heavy cream
- 1/4 cup pumpkin puree
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/8 teaspoon ginger
- 8 slices thick sliced bread
- Whisk the eggs, cream, pumpkin, vanilla, cinnamon, nutmeg, and ginger in a small bowl that is wide enough to dip your bread. Set aside.
- Melt a little butter in a large skillet over medium heat.
- Dip the bread into your egg mixture and place in your skillet. Cook until both sides are golden brown.
This recipe is extremely freezer friendly. I like to lay the extra pieces on a large baking tray in a single layer and flash freeze for 30 minutes. After that I toss them into a Ziploc and back into the freezer. Pop them into the toaster whenever you are ready to eat and you’ve got yourself a toasted piece of pumpkin heaven. Which is great for those busy week day mornings. It’s so easy that the kids can even get things together on their own.
