Summer weather has started (at least for a minute here in Utah) which means it’s time to bust out your summer favorites! I was SO excited to get a copy of the NEW book from Cupcake Diaries, Sun and Sizzle, so I can dive right in to all of my grilling favorites starting with this Chicken Caesar Pasta Salad!
Before we dive in to the beautiful dish above I want to give a quick overall review of the cookbook! I feel like I’m slightly bias because I’ve been a looooong time fan of the Cupcake Diaries blog and already love every recipe that I have tried. Her creamy tomato and tortellini soup is frequently requested by my seven year old and we almost never have leftovers. So when I got my copy in the mail the first thing I did was rummage through my paper stash and start a “must-make” list.
It was hard to narrow things down. With recipes like the Aloha Burger, Margarita French Bread, Blackberry Peach Lemonade it was hard to decide what to make first. After a long conversation with the kid (let’s be honest, he makes all of the real decisions) we settled on this one!
I loved how simple this really was. I started by using grilled chicken on the barbecue with just a simple spritz of lemon juice with sprinkled salt and pepper. Slice and dice that and then add it in with some other great ingredients like romaine lettuce, pasta, and tomatoes. The beauty of this recipe is that you really can customize it to your families tastes. Next time I’m thinking we might mix in some croutons for a little crunch.
