These creamy and dreamy Banana Cream Pie Bars are a summer time staple!
Answer me this… Am I the only person on the planet that buys bananas only to have them sit on the counter for DAYS until they are overly ripe and brown begging to be used??
Let’s back track for a second. Years and years ago (wait a second…. Am I really that old???) my dad would make us the ultimate treat. He would fill fancy champagne glasses to the brim with sliced bananas and vanilla wafers. He would top everything off with vanilla pudding and a giant dollop of cool whip. Holy smokes was it delicious. Now, I haven’t made this treat in years. Jump back to the present and here I was staring at 3 super ripe bananas ready to be sliced and diced into a recipe. I decided it was finally time for me to introduce my kiddo to this nostalgic treat that was a favorite of mine so long ago.
OK, so technically I added a little modern day twist. To make things easy for giving I decided to turn this fun dessert into a bar version. I smashed up a hefty amount of vanilla wafer cookies into crumbs, stirred with a little melted butter and pressed firmly into a 9×13 pan. Top with sliced bananas, pudding, and cool whip and you’re basically ready to devour this dessert!
My little guy was super hesitant to dive in which was a little disappointing, but after some serious banana bribing we got him to sample the sweet confection and it was love at first bite. He quickly declared this his second favorite to banana cream pie cheesecake. So what do you think? Worth giving these banana cream pie bars a try?
- 2 cup Vanilla Wafer cookie crumbs
- 1/3 cup butter, melted
- 3 ripe bananas, sliced
- 2 (3.4 oz) instant vanilla pudding
- 3 cups chilled milk
- 2 cups cool whip
- Preheat your oven to 350 degrees.
- Combine your cookie crumbs with the melted butter. Press firmly into a 9x13 pan. Bake 10 minutes. Allow to cool completely.
- Place your banana slices on top of the baked crust.
- Whisk together the vanilla pudding and milk. Spread over the sliced bananas.
- Top with cool whip and chill 4 hours.
