It’s delicious on it’s own, right? But why not kick it up a notch with some mint? My mint addiction started a few weeks ago when I visited the local farmers market… There was a vendor selling mint limeades that were out of this world amazing. I have been obsessed with finding the perfect balance ever since. Which means I have a lot of extra mint hanging around my house.
I decided creating a mint sugar might give this fruit salad a little something to send it over the edge, and I was right. It creates a light and refreshing taste to an already perfect snack!
- ½ C. pitted sweet cherries
- ½ C. raspberries
- ½ C. peaches, chopped
- 3 T. sugar
- 4-10 mint leaves, depending on how strong you want it
- Combine your fruit in a large bowl.
- Muddle the sugar and mint leaves together in a small bowl. Stir into your fruit and enjoy.
I had originally planned on adding in some blackberries, but unfortunately I left them on the top of my car when unpacking groceries! In the 100+ heat… they went bad pretty fast. Luckily it wasn’t lacking in flavor at all. Next time I might add some in, or I might not. We’ll have to see how I feel.
