Sweet Potato Bread

One reason I absolutely love the Holidays is the gift giving. Specifically, neighbor gift giving. It’s the one time of the year that I can unload all of my crazy concoctions. Breads, cookies, cakes, brownies… You name it and I’m making it!

After Thanksgiving I had a few sweet potatoes left over and couldn’t imagine throwing them out. So I quickly got to work on something that would be a great gift and freezer friendly! One more plus? It’s a tiny bit healthy too! Well… healthy-ish.

Sweet Potato Bread with a Maple Drizzle
(recipe adapted from Food.com)

The bread:
1C. white sugar
1/2C.  Canola oil
1 egg + 1 yolk
1C. Honey roasted sweet potatoes
1/2 t. vanilla
1-1/2 C. flour
1/8 t. baking powder
1/2 t. baking soda
1/4 t. salt
1/2 t. cinnamon
1/2 t. ginger
1/2 t. ground cloves

Preheat your oven to 325 degrees. Spray a bread pan with non-stick spray and set aside.
Beat the sugar, oil, egg and yolk, sweet potatoes, and vanilla with an electric mixer until smooth.

Whisk together the flour, powder, soda, salt, cinnamon, ginger, and ground cloves in a separate bowl.

Here is the secret to a great quick bread… When you are mixing in the dry ingredients use a wooden spoon. Pour the dry ingredients into the wet, and gently stir until all of the white disappears. Pour into your prepared pan, and bake for one hour and fifteen minutes.

Cool for ten minutes. Run a knife around the edge of the pan, and turn out onto a cooling rack.

For the drizzle:
6 T. Powdered Sugar
3 T. Maple Syrup (preferably homemade)
1/4 t. Maple extract

Whisk all of the ingredients in a small bowl. Drizzle over your completely cooled bread.

This bread is GOOOOOOD! The maple and sweet potato blend together perfectly! It is a little on the denser side, almost like a banana bread. It is perfect wrapped up in parchment and a nice piece of bakers twine. Slap on a quick gift tag and there you have it! One great neighbor gift!
