Coconut Blueberry Pancakes

We are a pancake loving family. If my son had to pick one thing to eat for the rest of his life… it would be pancakes. Pancakes with a lot of butter and absolutely NO syrup.

Weird… I know. Especially for an almost 4 year old.

Taking away they syrup leaves me with a challenge. A lot of the flavor from my previous pancake recipe relied heavily on the syrup for any sweetness. After failed attempts at adapting the ingredients, I decided to ADD to the list.

And that, ladies and gentleman, is how the Coconut Blueberry Pancake was born.

Cinnamon Baked Oatmeal

Oatmeal has never really been on the top of my list. When it comes to breakfast foods I think it is mediocre. If you have the right mix-ins then it can be a hit but on it’s own it falls a little flat.

I ran into a recipe on the Taste of Home  website for cinnamon baked oatmeal right around the time that Kamut brand had sent me over some whole grain oats. I figured it was a sign for me to bust open the bag and try out the new way of cooking an old breakfast food. I rolled up my sleeves, searched the pantry for some extra fruity goodness, and ended up with this amazing bowl of awesomeness.

Orange Sweet Rolls

I am a firm believer that you should always start your day off with a good breakfast. I make my little guy a variety of fun morning foods, including both savory and sweet. Our schedule typically goes a little something like this: healthy, healthy, sweet. We eat a lot of omelets, yogurt, granola, and fruit, so when a sweet day comes along we like to celebrate with something great.

The Pillsbury Orange rolls were introduced to me from my high school boyfriend. I think he made them for me once a week. They’ve been high on my list of favorite foods, but I wanted to give them a try homemade instead of pre-packaged. Something about fresh orange zest in a morning dessert just sounds refreshing and oh so yummy.

The only problem I was having is that I am a horrible bread maker. I stick with Rhodes Rolls and don’t venture much further. This was a giant leap for me, and oh so worth it!

Sugar Crusted Goodness

Like it or not, Valentine’s Day is sneaking up on us.

Since my son is now old enough to understand and celebrate every holiday, I decided to step it up and do something special. For our celebration (which will actually take place several days prior to the 14th so you can have a chance to recreate the fun) we will need a few recipes, some crafts, and boy approved valentines! This requires a lot of recipe testing before the big day!

First up, some delicious muffins! I am well aware that most of you have most likely made the New Year’s resolution to skimp on the sweets, but I think making one exception for February 14th may be in order. These muffins are amazing! There is an amazing sugar crust exterior with a soft and sweet raspberry center. Top that with a little melted butter and you have one great way to start your day!
