So when we were camping last weekend and my in-laws said they were making cheesy dutch oven potatoes to go with our Sunday night dinner, I responded with a, “WHA?!?!?!”

I had to see how they put this together !

Twisted Mac

My hubby decided to be super nice and take me and the little one to Boston’s a few weeks ago. I had never been there, but he promised that every single thing on the menu was amazing and that I wouldn’t be disappointed and he was right!

 I decided on the twisted macaroni and cheese, which was out of this world delicious. The waitress talked me into adding the sausage, which took things up another level! As soon as I got home I started searching for recipes, but could never find one that I thought would do it justice.

Last week my sister was driving me around, since I am a genius and broke my right foot and mentioned that she wants to try Boston’s. Of course, after she mentioned it I just had to make that macaroni for dinner!  I decided to use this base recipe, and adapt it to fit our taste.

Camping Food: Breakfast Sandwich

My husband is a bacon and eggs sort of guy. There has really only been one time our entire marriage when he’s asked me for something sweet for breakfast. And it was some funky nutella and chocolate stuffed french toast thing smothered in chocolate sauce. Which I refused to make. {until father’s day, but don’t tell}.

So it wasn’t a big surprise to me when he showed the most excitement for the first breakfast we had on our trip last weekend…

The breakfast sandwich is a huge deal in the Hallows family apparently. Especially when you slap it on some fancy bread {or in this case, croissants}. My brother & sister in-law were in charge of this yummy meal, and were actually worried that they would be too generic…

Our response??

Anyone that takes the time to fry up enough eggs for a small army is ok in our book!

Breakfast Sandwich

Eggs
Cheese
Meats {bacon, Canadian bacon, ham… Whatever you fancy}
Bread/rolls of your choice
Butter
Either a portable grill, or an over the fire grill

PREP WORK: Slice up your cheese, and butter your rolls. Technically this can be done in advance, but we’ll pretend you are all procrastinator’s. Just like I am.

GET COOKING: Crack those eggs onto your grill of choice, and season to taste. Cook for 1-2 minutes, then flip. Place one slice of cheese on each egg and allow to melt while it finishes cooking on the second side. While that is happening, place your chosen meat onto the grill to heat up. Feel free to toast your bread as well.

EAT UP: Build your sandwich, and serve.


These are perfect for morning’s that you will be on the go. You could serve some fruit on the side. The eggs really fill you up, and give you a nice boost of protein to start the day. I also like that these are super changeable. You can adjust anything to your liking. We broke the yolks, but I know a lot of people that enjoy them runny.
