Flourless Nutella Cookies

We’ve all been there… You walk over to the pantry… Searching for something sweet… You think;

“Oh! I’ll make some cookies! Something with chocolate!”

Because what girl DOESN’T love chocolate? But when you get to the pantry you realize something is wrong… Very wrong. There is NO flour and you are out of butter!

How did you let this happen?!?!?

This is EXACTLY what happened to me last week. I was out of butter and flour. Two of the most important ingredients when baking. How in the world did I not realize how low we were? I was definitely going to need to make a trip to Costco and stock up, but that wasn’t going to happen until the next morning and I wanted cookies now…

SO, I improvised with a little Nutella and sugar.

Shortbread Cookies

I have made the decision that shortbread cookies just aren’t my cup of tea. Sure… they are meant to be a little ‘vanilla,’ and normally I would be all over that… But cookies are the one thing I feel should be chocolate. Or contain chocolate. Maybe dipped. But just plain ol’ vanilla?!?

Having said that… everyone else around me thinks I’m crazy. These little gems were the hit of the week with my sister and son. They really love them frozen.

Weird. I know.

Homemade Thin Mints

I love Thin Mints.

Whenever I see girl scouts out at the stores selling their boxes of cookies… I buy too many a few boxes. Like enough to line the inside shelves of our freezer. How can you say no to those adorable little faces asking you to help support their troop??

The only problem is that I can NEVER seem to find those stinken scouts when I need them! With all of my friends posting status updates about their cookie gold mines… I had to do something…

Oatmeal Cookie 3 Ways

My little sister has been begging me for a good oatmeal cookie. The only problem is that I have been so busy with work that there was no time for me to deliver. I somehow managed to squeeze in a batch, but I wanted to make them extra special. So this post is how I created a basic oatmeal cookie 3 ways.

I searched the pantry and found a few of her favorite things… chocolate chips, white chocolate chips and craisins. I can totally work with that!

I whipped up a basic oatmeal cookie recipe, divided the dough into three bowls and got creative. The first bowl had just plain ol’ oatmeal cookie dough. The second, I filled with white chocolate chips and crasins. The third batch, I loaded with chocolate chips.

I figured one of these soft and chewy treats would satisfy her craving!
