Twisted Mac

My hubby decided to be super nice and take me and the little one to Boston’s a few weeks ago. I had never been there, but he promised that every single thing on the menu was amazing and that I wouldn’t be disappointed and he was right!

 I decided on the twisted macaroni and cheese, which was out of this world delicious. The waitress talked me into adding the sausage, which took things up another level! As soon as I got home I started searching for recipes, but could never find one that I thought would do it justice.

Last week my sister was driving me around, since I am a genius and broke my right foot and mentioned that she wants to try Boston’s. Of course, after she mentioned it I just had to make that macaroni for dinner!  I decided to use this base recipe, and adapt it to fit our taste.

Twisted Mac and Cheese with Sausage

Ingredients
  • 2 C macaroni
  • ⅓ C whole milk
  • 6oz Velveeta cheese
  • 1 C sharp cheddar, shredded
  • ¼ t. red pepper flakes
  • ⅛ t. ground black pepper
  • ¼ C diced roasted red pepper
  • 4 T. crushed Italian croutons
  • 4 T. grated parmesan cheese
  • 2t. melted butter
  • BBQ King Brand Jalapeno & Cheddar Smoked Sausage, cooked and sliced

Instructions
  1. Preheat your oven to 375 degrees. Cook the pasta according to the package directions. Drain and set aside.
  2. Combine the milk, Velveeta, cheese, pepper flakes, and pepper. Heat until all cheese is melted. Pour over the cooked noodles. Stir in the red peppers and sausage.
  3. Transfer noodles to a baking dish. Mix the crouton crumbs, parmesan, and butter. Sprinkle over the top and bake for 15 minutes, or until heated through.

The sausage was a great addition, it really steps up the flavor.  I think next time I might add a little more.  We aren’t huge fans of the Velveeta flavor, but it’s well hidden inside the swirl of other flavors.

This is definitely going into my “comfort food” category or the “if I get to pick my last meal” category.
