Let’s jump into Tuesday with an amazing Taco Dip! I’m a sucker for a good Taco Tuesday recipe and today I’m teaming up with ConAgra to show you how easy this delicious dish can be. It all starts with your base ingredients; RO*TEL tomatoes and Rosarita traditional refried beans.
I wanted to kick things up a notch so in order to give this dip a true taco flavor I mixed in a little taco seasoning right into the beans. It really elevated the flavor and took things up a notch. Another easy way to incorporate the flavor would be to cook up some hamburger according to the taco seasoning package before adding it on top or adding some more toppings. Combining the canned goods with some fresh produce creates a fun family favorite that’s perfect for every day eating or a quick party appetizer to share with your friends.
Speaking of hamburger… I wanted to share one of my all-time favorite Kitchen Tips! As a busy mom I am always looking for ways to make dinner time run a little smoother. By cooking and freezing my meat ahead of time it becomes a snap to reheat and add to your favorite recipe! Typically I will cook 2 pounds of beef and divide into individual serving sized bags. Label with the date and freeze for quick dinner prep!
One other tip I would suggest is to check out a few of the other RO*TEL and Rosarita flavor options I saw while shopping at Walmart and adjust the recipe to fit your families taste! You can take things from mild to spicy and refried to black beans! It’s endless possibilities.

- 1(16oz) can Rosarita refried beans
- 2-4 tablespoons taco seasoning
- 3/4 cup sour cream, divided
- dash hot sauce
- 1/2 pound cooked hamburger meat
- 1 cup shredded cheese
- 1/2 can RO*TEL tomatoes
- 1/4 cup chopped red onion
- Sliced lives
- Tortilla Chips
- Mix your refried beans with the taco seasoning, 1/4 cup sour cream and a dash of hot sauce. Spread into an 8" dish.
- Layer the hamburger meat, shredded cheese, rotel tomatoes, remaining sour cream, olives, onion, and avocado.
- Serve with chips.
