With it being football season I am sure a lot of you are on the hunt for a great game day appetizer. You might even be getting ready to throw one heck of a super bowl party, am I right? Why not combine two classic party foods into one and wow your guests with these buffalo chicken meatballs?
I am all about simple and tasty recipes this year. The easier the better, and this one is about as worry free as it comes. Toss all of the ingredients together (the list is short), give it a good mix, shape and bake. Both my husband and I were pleasantly surprised at how flavor packed these really were. It was just like we were enjoying a batch of hot wings but without the the gristle and mess that comes along with them. Ok, so maybe there was a little bit of mess.
These need to be warm when you serve them so I suggest tossing them in hot sauce right in your slow cooker. Keep it on low and let your guests dish them up on their own. Serve with some blue cheese or ranch dressing. Why not give my homemade version a try?
Buffalo Chicken Meatballs
- 3/4 cup plain bread crumbs
- 3/4 cup buffalo or hot sauce divided
- 1/4 cup celery finely diced
- 1 egg white
- 1 lb ground chicken
Preheat your oven to 400 degrees. Line a baking tray with foil and lightly mist with cooking spray.
In a large bowl combine the bread crumbs, 1/4 cup hot sauce, celery, and egg white. Stir in the chicken until fully incorporated.
Shape the mixture into 1 inch balls. Place on your baking tray. Cook 25 minutes or until cooked through.
Toss in the remaining sauce and serve.
