Have you been to Cafe Rio or Costa Vida? In Utah they are HUGE. Like, every time I go in there is a line out the door. Of course I instantly fell in love with their tex-mex style cuisine and their delicious version of ranch. This cilantro lime ranch is not identical to their recipes but similar and just as amazing smothered on a salad or burrito.
The original recipe called for tomatillos. I left those out simply because I didn’t have any on hand and had a hungry six year old ready to eat. That left me with zero time to run to the store. Luckily, the flavor was still on point and me dressing-hater child licked his bowl clean. Can we pause to talk about how strange it is that my child hates all salad dressings?? He insists on eating his greens free of any “sauce.” Poor kid has no idea what he is missing.
One of the great flavors that shines through has to be the lime. I’m a big fan of adding citrus to any recipe. It keeps things fresh and flavorful. Limes are one thing you will most always find in my fridge. The other shinning star has to be the cilantro. The bold flavor stands above the rest and blends perfectly with the lime.
A few other ingredients are milk, sour cream, and a ranch packet. Simple, right? Even better is that you’ll just toss all of this straight into your blender and puree until smooth. Serve it right away or refrigerate it until you are ready to use. If you want you can substitute mayonnaise instead of sour cream. Like before, it just happens to be what I had on hand. Either would taste just as great.
Cilantro Lime Ranch
- 1/2 cup sour cream
- 1/2 cup milk
- 1 jalapeno seeded
- 1/2 bunch fresh cilantro
- zest and juice of 1 lime
- 1 ranch dressing packet
Place all ingredients in a blender and pulse until smooth.
