If you follow me on Instagram, you probably saw a little peek at a party that I threw with my friend Jonie (from Just Between Friends) last week. We decided to beat the winter blues and throw a quick Winter Wonderland themed shindig complete with snowflakes, ice cream, and waffles! That’s right… The main items on the menu were waffles and ice cream. I decided to stick with chocolate and cinnamon waffles, which ended up a big success with the fun flavors of Tillamook Ice Cream we picked up!
So today I’m sharing a closely guarded secret with all of you (not really but I like to pretend)! My cinnamon waffles which are crisp on the outside, soft in the middle, and have a nice subtle cinnamon kick!
These are also great with some chopped banana’s or chocolate chips thrown right into the batter. Or you could slice a few strawberries and pair it with fresh whipped cream. OR if you are like me and really enjoy the classics stick with simple syrup. Oh, and LOTS of butter.
HOW TO FREEZE: Layer your waffles on a cookie sheet right after baking. Place in the freezer for 20 minutes (this keeps them from sticking together). Pull them out and toss them into a freezer storage bag. When you are ready to reheat… place them back onto a cookie sheet and under the broiler for a few minutes.
- 2 eggs divided
- 1-3/4 cup milk
- 1/2 cup butter melted
- 1 teaspoon vanilla extract
- 2 cups flour
- 1/2 cup sugar
- 4 teaspoons baking powder
- 1/4 teaspoon salt
- 3/4 teaspoon cinnamon
Preheat your waffle iron. Beat the egg whites until peaks form and set aside.
Stir together the milk, egg yolks, butter, and vanilla. Set aside.
Whisk the flour, sugar, baking powder, salt and cinnamon. Mix in the wet ingredients and stir until combined. Fold in the egg whites.
Pour mix into your waffle iron and cook until golden brown.
