Farro Burrito Bowls
This tasty grain was exactly what I needed for a quick back-to-school recipe. As a working mama I struggle with two things:
1. Packing tasty lunches.
2.Keeping dinner easy and simple when our schedules are crazy.
These delicious burrito bowls help in BOTH of those categories which easily qualifies this dish as a winner in our home. You’ll start with cooking up your farro and creating the most amazing dressing with Pompeian Organic Extra Virgin Olive Oil (seriously consider making double the amount to save for later).
Toss all of your ingredients into your bowls and voila! One mom + kid approved meal ready to hit the table. For even faster prep you can prepare your farro a few days in advance and keep it stored in the refrigerator. You will be amazed at how quickly the meal vanishes and has your kiddo’s asking for more.
Side note… We always keep a hefty supply of Pompeian around for dressings and marinades but the topping listed below has quickly become our go-to. It is DELICIOUS in these bowls but also adds a super punch of flavor to chicken, fish, and even steak! I’m almost hesitant to share this carefully guarded favorite but just know you will want to add it into your supply of school night meals.
Tip for packed lunches:
I admit, most of our packed lunches are for me to take to work. There is nothing I love more than being able to quickly heat up a tasty meal and pause my day to enjoy. But lately my little one has been requesting home lunch on more occasions than not. This one is perfect for the lunchbox!
You’ll need two containers. One for the farro and toppings plus one for the dressing. Keeping the two separate is super important to help keep things from going soggy. Once you’re ready to eat simply toss your main ingredients into the microwave for a few seconds (minus the dressing) and drizzle the dressing over the top to complete your meal. We also really like this served cold!
Farro Burrito Bowls
- 1 Tbsp Pompeian Organic Extra Virgin Olive Oil
- 1-1/2 tsp cilantro, chopped
- juice from 1 lime
- 1/2 tsp honey
- salt and pepper to taste
- 1 cup farro, cooked
- 1 chicken breast, cooked and sliced
- 1/2 cup black beans
- 1/2 cup chopped tomatoes
- 1/4 cup corn
- avocado, sour cream, cheese
Combine the first 4 ingredients in a small bowl. Season with salt and pepper to taste.
Divide your farro, chicken, black beans, tomatoes, corn, and any additional toppings between two bowls. Drizzle with your dressing and toss to coat.
