You just cannot go wrong with this recipe. Whether you want to strain your pan drippings or whisk together a stock, you’ll have everyone raving over the buttery flavor in this simple gravy recipe.
TURKEY GRAVY INGREDIENTS
Good news? You don’t need much to make this insanely easy turkey gravy recipe. Homemade turkey gravy is actually really simple.
- Butter: I am a sucker for salted butter, but this recipe does not need it. Use unsalted butter to create your roux and add salt as needed.
- Cornstarch: We find that cornstarch really does thicken gravy better than flour. However, you can use flour in a pinch. It will give you a slightly less thick end result, but still equally delicious.
- Drippings: OR Stock. We use this recipe both ways and you’d never know the difference. Just use a quality option, like Better Than Bouillon Turkey Base.
- Salt and Pepper: Those are the only seasonings I use, but you’re welcome to put your own spin on things!
We season our turkey with salt and pepper and slow roast to perfection. You always get at least 4 cups of drippings but if you find you are a little short you can substitute chicken stock. That means you can even double this recipe!
HOW TO MAKE THE BEST TURKEY GRAVY
Always taste before and as you add the seasonings. A well seasoned gravy can make the meal, but heavy hand can ruin your gravy.
- PREP: Measure ingredients and strain drippings from the pan, if using.
- ROUX: Create a roux by melting the butter in a medium sized pot (affiliate). Whisk (affiliate) in the flour until smooth and combined. Let this cook for just a minute or two, or until you see bubbles start to form at the top.
- STIR: Add the broth or drippings to the pan, whisking constantly.
- SEASON: Taste first, and season with salt and pepper as needed.
- THICKEN: Continue to heat over medium heat, whisking the entire time, until the mixture is at a boil and thickened. All together that should take about 2 minutes.
GRAVY RECIPE TIPS AND FAQS
I always start with 3 tablespoons of cornstarch. If the gravy is too thin, mix 1 tablespoon of cornstarch more with some of the warm gravy until a paste forms. Whisk into the gravy and cook one additional minute. You can use flour if you’re out of cornstarch. The end result will be slightly less thick.
Lumps? Run your gravy through a mesh sieve to smooth the liquid. Constantly stirring can also help cut back on lumps in your gravy.
While we do love using the drippings, you can get an equally tasty gravy by using turkey stock. Try Better Than Bouillon Turkey Base. It adds such a delicious flavor and no one would know you didn’t use drippings!

Ingredients
- 1/4 cup butter
- 3 tablespoons to 1/4 cup cornstarch
- 2 cups broth or drippings
- 1/2 teaspoon salt and pepper more or less to taste
Instructions
- 1. Melt the butter in a medium sized pot. Whisk in the flour until smooth and combined.
2. Add the 2 cups of broth or drippings, season with salt and pepper.
3. Cook over medium heat, stirring with a whisk constantly, until the mixture is at a boil and thicker in consistency, about 2 minutes.
