I’m not really an ice cream fan… You probably would never know since last year I posted so many homemade ice cream recipes. But popsicles are right up my alley. Especially if they contain fruit of any kind.
I realized, almost too late, that I still had a carton of strawberries sitting in my fridge. I wanted to do something super amazing, but during the summer don’t really have the time or energy to bake. So I went with a good ol’ standby recipe.
These strawberry cream pops make an appearance every summer. Something about the vanilla yogurt and pureed strawberry mixture make them hard to resist! They never last more than a week… If I decide to share that is…
Strawberry and Cream Popsicles
- 2 C. diced strawberries
- 1/4 C. sugar
- 2 tsp. vanilla extract
- 1-1/4 C. vanilla yogurt
- Stir the strawberries, sugar, and vanilla in a large bowl. Let them sit together for a few minutes so they can combine forces and make a mouth full of awesome flavors. (Or I guess just extra juices if you want to be boring)
- Toss your strawberries and yogurt into the blender and mix, mix, mix.
- Pour into your popsicle molds and freeze
One of the best things about this recipe is that my four year old can actually help me whip these up! It’s so much more fun when I can get my family involved in the kitchen. I think we might even try to have some strawberry slices mixed in next time. Everything is better with frozen chunks of fruit, right?
I have a feeling this summer is slowly becoming dedicated to finding great popsicle recipes. Do you guys have a recipe you recommend?
