Oatmeal Cream Pies

These homemade Oatmeal Cream pies are a classic sandwich cookie. Soft with a fluffy filling in the middle making these better than the original!

  • 1 cup brown sugar
  • 6 tablespoons butter soft
  • 1 egg
  • ½ teaspoon vanilla extract
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • 1-1/4 cup all-purpose flour
  • 1 cup quick cooking oats
  • 2 tablespoons hot water
  • For the filling:
  • ¾ cup butter softened
  • 3 cups powdered sugar
  • 3 tablespoons heavy cream
  • 1-1/2 teaspoons pure vanilla extract


  1. Preheat your oven to 350 degrees. Line two cookie trays with parchment paper.
  2. Cream together the brown sugar with the 6 tablespoons of softened butter. Add the egg and vanilla extract.
  3. In a small bowl, whisk together the salt, cinnamon, baking powder, baking soda, and flour. Stir into the wet ingredients until fully incorporated.
  4. Fold in the oats and hot water. Drop heaping tablespoons of dough onto your prepared sheets leaving 2 inches between each cookie. Bake for 10 minutes or until the edges are lightly browned. Cool completely.
  5. For the filling: Whisk the butter until light and fluffy. Add the powdered sugar, cream, and vanilla. Beat until a creamy consistency is achieved. Spread 1 tablespoon of filling into the middle of two cookies
