Strawberry Shortcake


  • 2 cups strawberries sliced
  • 1/4 cup + 3 tablespoons sugar divided
  • 2 cups all-purpose flour
  • pinch salt
  • 2-1/2 tablespoons baking powder
  • 6 tablespoons cold butter
  • 3/4 cup heavy cream
  • whipped cream optional


  1. Combine the strawberries with 1/4 cup sugar in a small bowl. Cover and refrigerate until ready.
  2. Preheat your oven to 450 degrees.
  3. Whisk together the flour, 3 tablespoons of sugar, salt, and baking powder. Cut in the butter using a pastry blender or two knives. Stir in the cream until a dough forms.
  4. Turn the dough onto a lightly floured surface and knead just until it comes together. Roll until 1/2 inch thick and cut into circles.
  5. Bake 10 minutes or until lightly browned. Top with your strawberry mix and whipped cream.

Tip: This recipe does better if you mix it by hand. The secret is not to over mix the dough.
