Coconut Cream Pie

Ingredients

  • 1 cup sugar
  • 1/4 cup corn starch
  • 1/4 teaspoon salt
  • 3 cups whole milk
  • 4 egg yolks beaten
  • 3 tablespoons butter melted
  • 1-1/2 teaspoon vanilla extract
  • 1-1/2 cups finely shredded coconut
  • 1 9 inch pie shell baked

Instructions

  • Whisk together your sugar, cornstarch, and salt in a medium sauce pan. Slowly whisk in the milk. Heat and stir until it reaches a soft boil. Continue cooking for two minutes stirring frequently. Remove from the heat when it is slightly thickened. Remove from the heat.
  • Pour one cup of the heated milk mixture in with you eggs. Whisk until just combined. Slowly stir the eggs back into your custard. Return to the heat and bring to a boil. Cook for an additional two minutes.
  • Immediately pour your custard mixture through a strainer into a medium bowl. Mix in the butter, vanilla, and coconut. Pour into your prepared pie crust.
  • Chill overnight and enjoy with a little whipped cream
