BBQ Chicken Flatbread Pizza

This easy BBQ Chicken Pizza Recipe is perfect for busy weeknights! Made using flatbread as the crust, it is the perfect quick dinner and ideal for using leftovers. Customize with your favorite toppings and have dinner on the table in under 20 minutes!

Ingredients

  • 2 round flatbread or pitas
  • 1/4 to 1/2 cup bbq sauce
  • 1 cup mozzarella cheese
  • 1 cup chicken cooked and sliced
  • 1/4 red onion sliced
  • Cilantro or green onions

Instructions

  • Start by heating the oven to 420°F (220°C).
  • Take 2 round flatbreads or pitas and lay them on a baking sheet. 
  • Spoon 1/4 to 1/2 cup of BBQ sauce onto the flatbreads. How much you use depends on how saucy you like it! Spread it around with the back of the spoon, leaving a little border around the edge for that classic “pizza crust” look.
  • Sprinkle 1 cup of mozzarella cheese evenly over both flatbreads. 
  • Scatter 1 cup of cooked, sliced chicken over the top. 
  • Take 1/4 sliced red onion and distribute it over the chicken.
  • Slide the baking sheet into the oven and bake for about 8 to 10 minutes. You’ll know it’s done when the cheese is bubbly and the edges of the flatbread are golden brown.
  • Remove from the oven, let it cool for a couple of minutes (I know, it’s hard to wait!), then cut into slices. Serve it up and watch it disappear!

Notes

  • Pre-bake the Flatbread: For an extra crispy base, give your flatbread a quick pre-bake for about 5 minutes before adding toppings. This can prevent sogginess, especially if you’re generous with the sauce.
  • Quality BBQ Sauce Matters: The sauce is a key player here. Opt for a high-quality BBQ sauce that you love. The flavor of the sauce significantly influences the overall taste of your pizza.
  • Get Creative with Cheeses: Mozzarella is great, but why stop there? Add some smoked gouda or sharp cheddar for a more complex flavor profile. Cheese blends can really elevate the taste.
  • Season Your Chicken: Ensure your chicken isn’t bland. Season it well or even consider using leftover grilled or rotisserie chicken for added flavor depth. We also like to toss it in a little bbq sauce before adding to the pizza.
