Mint Brownie Brittle

Ingredients

  • 1 box brownie mix and listed ingredients OR 1 batch of your favorite brownie batter
  • 1 teaspoon mint extract
  • 1/2 cup mini chocolate chips optional

Instructions

  • Line a large cookie sheet with parchment or a silicone mat. Preheat your oven to 350 degrees.
  • Prepare the brownie batter according to the package directions.
  • Stir the mint extract and spread onto you cookie sheet until it is thinned about 1/4 inch. You want to make sure that the batter is spread fairly even to avoid burning.
  • Sprinkle with chocolate chips, if using, and bake for 15-20 minutes. Make sure you turn the pan halfway through for even baking. Keep a close eye on the dish to avoid over baking. If you notice the edges browning remove the pan from the oven.
  • Cool completely and break apart by hand.

Notes

Line your pan with parchment. This brittle will be difficult to get out of the pan without the extra help.
