Guinness Brownies

These fudgy Guinness brownies are the perfect mixture of stout and chocolate. Moist and rich chocolate flavor and perfect to celebrate St. Patrick’s Day, or any day!

Ingredients

  • 1/2 cup flour
  • 1/4 cup Dutch or dark cocoa
  • 1/4 teaspoon salt
  • 1/2 cup bittersweet chocolate chips
  • 1/4 plus 2 tablespoons butterscotch chips
  • 3 tablespoons butter soft
  • 1/2 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup Guinness
  • 1/2 cup chocolate chips optional

Instructions

  • Preheat the oven to 350 degrees. Line a 9 inch pan with parchment paper or mist with cooking spray and set aside.
  • Whisk together the flour, cocoa and salt. Set aside.
  • In a heat proof bowl combine the chocolate chips with the butterscotch. Melt in the microwave for 2 minutes or until melted, stirring every 20 seconds to prevent burning. Set aside.
  • Cream together the butter and sugar in the bowl of an electric mixer until fluffy. Add the eggs and vanilla. Stir until completely incorporated. Drizzle in the melted chocolate. Mix until combined.
  • Fold the dry ingredients followed by the Guinness and chocolate chips if using. Pour into your prepared pan and bake 35-40 minutes or until a toothpick comes out clean.
