This cilantro lime rice is the perfect side dish to any Mexican meal. We especially love it as a side to tacos, burritos, or sweet pork salad.

Ingredients

water

long grain rice

tablespoon
butter

teaspoon
lime zest
1-2
tablespoons
fresh lime juice

finely chopped cilantro
Instructions
Add the water to medium pot. Bring to a full boil.
Stir in the uncooked rice and butter.
Cover and simmer on low for 15 to 20 minutes.
Fluff the rice with a fork.
Stir in the lime zest, juice, and cilantro. Serve immediately.
