Cilantro Lime Rice

This cilantro lime rice is the perfect side dish to any Mexican meal. We especially love it as a side to tacos, burritos, or sweet pork salad.

Ingredients

  • 2 cups water
  • 1 cup long grain rice
  • 1 tablespoon butter
  • 1 teaspoon lime zest
  • 1-2 tablespoons fresh lime juice
  • 2 tablespoons finely chopped cilantro

Instructions

  • Add the water to medium pot. Bring to a full boil.
  • Stir in the uncooked rice and butter.
  • Cover and simmer on low for 15 to 20 minutes.
  • Fluff the rice with a fork.
  • Stir in the lime zest, juice, and cilantro. Serve immediately.
