Ingredients

  • 1 (12 oz) breakfast sausage
  • 1/2 cup chopped peppers red and green
  • 1/4 cup chopped onions
  • 2 cups shredded hash browns
  • 1 cup shredded cheese
  • 1/2 cup Bisquick
  • 1 cup milk
  • 3 large eggs
  • salt and pepper to taste

Instructions

  • Preheat the oven to 400 degrees. Grease a 9 inch baking dish with cooking spray and set aside.
  • Cook the sausage, peppers, and onions in a large sized skillet until the sausage is browned and the peppers have slightly softened, about five to seven minutes.
  • Stir the hash browns and cheese into the meat mix. Transfer to the prepared dish.
  • Whisk the Bisquick, milk, eggs, salt and pepper together in a large measuring cup until smooth. Pour evenly over the sausage mix.
  • Bake for 45 minutes to one hour or until a knife comes out clean.

Notes

  • You can prep this all the way through step 4 the night before. Keep covered and stored in the refrigerator until ready to cook.
