Ingredients

  • 1 cup + 2 tablespoons all-purpose flour
  • 1/3 cup yellow cornmeal
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 3/4 cup plain yogurt
  • 3/4 cup milk
  • 1/4 cup oil I use coconut but vegetable would work too
  • 1 teaspoon vanilla extract

Instructions

  • Whisk together the flour, cornmeal, sugar, baking powder, baking soda, and salt in a large bowl.
  • Combine the eggs, yogurt, milk, oil, and vanilla in a measuring cup. Whisk to combine and fold into the dry ingredients until just combined.
  • Heat a skillet over low/medium heat. Grease with non-stick spray or butter and scoop 1/3 cup of the batter into your pan. Cook 2-3 minutes or until bubbles begin to form on the surface and flip. Cook an additional 2-3 minutes or until browned.
  • Serve with honey butter, syrup, or berries.
