Preheat your oven to 350 degrees. Heat a large cast iron or oven proof skillet over medium heat with the oil.
Season your pork chops with salt and pepper on each side and add to the hot oil along with the onions. Cook until just browned on each side (about 2 minutes per side).
Remove the pork chops and onion and set aside.
Stir the water and butter together in your pan and bring to a boil. Add your packaged stuffing and onions and stir to combine. Top with the pork chops.
Toss the apples with the brown sugar and sprinkle over the top of your dish. Bake 20-30 minutes or until your pork chops are cooked completely.
