1½cupsshredded cheesewe like pepper jack or cheddar
diced onionpico, salsa, sour cream, or any other toppings you may enjoy.
Instructions
Combine the first 7 ingredients for the marinade in a blender or food processor. Pulse until smooth. Add the oil and pulse until combined.
Pour the marinade over the steak. Cover and refrigerate 2-4 hours.
Heat the broiler in your oven. Cook the steak 12 minutes on each side or until the internal temperature reaches 145 degrees. Allow to rest 10 minutes. Slice thin.
Assemble your tacos and enjoy!
Notes
145 degrees cooks your steak to a medium. Add an additional minute or two for a more well done steak. For crunchy shells - Heat your oven to 375 degrees. Mist your corn tortillas with olive oil cooking spray on both sides. Flip a cupcake tin upside down. Place your tortillas between the cups to form a taco shape. Bake 12 minutes.
