Ingredients

  • 1/4 cup lemon juice
  • 1/4 cup granulated sugar
  • 1 cup very cold water
  • 3 cups vanilla ice cream I suggest vanilla bean

Instructions

  • Squeeze the lemons until you get 1/4 cup lemon juice. Add to a large measuring cup.
  • Whisk the sugar in with the lemon juice until incorporated with a small whisk, roughly 1 to 2 minutes.
  • Pour the lemon mixture into a blender with the cold water and ice cream.
  • Pulse or blend 1 to 2 minutes, or until you reach a thick milkshake consistency.
  • Divide into two glasses and enjoy!

Notes

  • Fresh lemon juice really is going to be the best. You don’t need much, about 1/2 a cup. That is the equivalent of about one large lemon.
  • A few tips to help you extract the lemon juice; Warm the lemons in a bowl of water before starting and roll it on the table or counter before slicing. This helps to loosen things up and make juicing 100x easier.
  • Add some water to a large measuring cup filled with ice. Let it sit for 10 to 15 minutes so it can get properly chilled. This is going to help keep the shake from melting too quickly.
