Ingredients

  • 1 recipe for double pie crust
  • 6 cups thinly sliced apples peeled if desired
  • 2 tablespoon lemon juice
  • 3/4 cups brown sugar
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon nutmeg
  • 2 tablespoons all-purpose flour

Instructions

  • 1. Preheat the oven to 425 degrees.
    2. Roll your pie crust to fit into a 9-inch pan. Place into the pan and firmly press the bottom and sides. Set aside.
    3. In a large mixing bowl, toss the apple slices with lemon juice. Sprinkle with the sugar, cinnamon, nutmeg, and flour. Toss to combine.
    4. Pour into the prepared pie crust. Top with a second crust that has been rolled out to 1/8 inch thickens.
    5. Crimp the edges closed and cut two to three slit shapes in the top to allow steam to escape.
    6. Bake 20 minutes. Remove from the oven and carefully cover the edges of the pie with a pie shield or tin foil.
    7. Continue to bake an additional 25 minutes.
    8. Allow the pie to cool completely before serving.

Notes

  • Use a variety of different apples- but make sure they are firm. For this recipe I like a mix of Granny Smith, Golden Delicious, and Honeycrisp. But you could also use McIntosh or Cortland.
