Eggnog French Toast

Ingredients

  • 4 large eggs
  • 1 cup eggnog
  • 1 teaspoon cinnamon
  • 1/2 teaspoon pumpkin pie spice
  • Pinch nutmeg

Instructions

  • 1. Whisk together the eggs, eggnog, and spices in a shallow bowl that is wide enough to dip your bread. Set aside.
  • 2. Heat a large skillet over low/medium heat. You want it to be right around, or just below, 300 degrees. Melt 1/2 tablespoon of butter or mist with cooking spray- I recommend coconut oil spray
  • 3. Dip one slice of bread into the egg mixture and turn to coat fully. Lift out of the egg mixture allowing excess to drip off.
  • 4. Place in your preheated pan. Cook 1 to 2 minutes on each side, or until golden brown. Continue with the remaining slices.
  • 5. Serve immediately with warmed syrup or fresh fruit.

Notes

Overnight Bake instructions:
1. Spray a 9x12 baking pan with non stick spray.
2. Arrange the bread slices in the pan in an even layer.
3. Whisk together the eggs, eggnog, cinnamon, and spices. Pour over the top.
4. Cover and refrigerate overnight.
5. In the morning, preheat the oven to 375 degrees.
6. Bake 30 to 40 minutes, or until golden on top.
