Start by placing your mixing bowl into the freezer for about 20 minutes to chill.
Add the heavy cream into your chilled mixing bowl. Beat with a whisk until soft peaks form, or just as it begins to thicken.
Add the butterscotch liquor and whip for 3 to 5 minutes at high speed, or until fluffy. Watch closely to make sure it doesn’t begin to turn to butter. Set the whipped topping aside.
Drink:
Divide the vodka and butter extract amounts into two chilled glasses.
Optionally, you can add 1oz of butterscotch schnapps to each glass if you want a little extra kick.
Top the drinks with cream soda and gently stir to combine.
Add a dollop of butterscotch whipped cream and drizzle butterscotch sauce (if using) to taste. Enjoy!
