Butterbeer Cocktail

Calling all adult Harry Potter fans; this butterbeer cocktail recipe, full of creamy flavors and butterscotch schnapps, will enliven any gathering!

Ingredients

Topping:

  • 1/2 cup heavy cream
  • 2 oz butterscotch schnapps

Drink:

  • 2 oz vanilla vodka
  • 2 oz butterscotch schnapps optional
  • 1/2 teaspoon butter extract
  • 12 oz cream soda
  • 1 tablespoon butterscotch sauce optional

Instructions

Topping:

  • Start by placing your mixing bowl into the freezer for about 20 minutes to chill.
  • Add the heavy cream into your chilled mixing bowl. Beat with a whisk until soft peaks form, or just as it begins to thicken.
  • Add the butterscotch liquor and whip for 3 to 5 minutes at high speed, or until fluffy. Watch closely to make sure it doesn’t begin to turn to butter. Set the whipped topping aside.

Drink:

  • Divide the vodka and butter extract amounts into two chilled glasses.
  • Optionally, you can add 1oz of butterscotch schnapps to each glass if you want a little extra kick.
  • Top the drinks with cream soda and gently stir to combine. 
  • Add a dollop of butterscotch whipped cream and drizzle butterscotch sauce (if using) to taste. Enjoy!

Notes

  • Butterscotch sauce can be found in the ice cream section of most grocers. You can also make a homemade version like the one in this recipe for butterbeer cupcakes.
  • Chill your mugs in the freezer for a fun frosted glass that will keep your drink nice and cool.
