Easy Banana Oat Pancakes

Banana Oat Pancakes – Fluffy, filling, and full of flavor! This easy pancake recipe starts with a box mix making it extra simple and perfect for busy mornings. Banana adds the perfect touch of sweetness while the walnuts give it amazing crunch.

Ingredients

  • Pancake Mix- and whatever is called for on the box to make a batch
  • 2 ripe bananas
  • 1/2 cup old fashioned oats
  • 1/4 cup walnuts chopped
  • 1 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract

Instructions

  • Prepare the pancake mix according to the package directions.
  • Stir in the vanilla extract.
  • Mash the banana and add to the mix along with the oats, walnuts, and cinnamon. Stir gently, folding if necessary, until all of the ingredients are combined.
  • Let the mix sit for five minutes while you prepare to cook.
  • Preheat a skillet over low/medium heat. Mist with cooking spray or add a small amount of butter to grease the pan.
  • Scoop 1/4 cup of the batter into the center of the skillet.
  • Cook for 1 to 2 minutes, or until bubbles begin to form and pop on the surface of the pancake and the edges begin to curl up. Flip and cook an additional 2-3 minutes or until golden brown.
  • Serve immediately with butter and warm syrup.

  • Try these delicious pancakes with maple syrup or homemade butter pecan syrup!
  • Try soy milk, almond milk, or coconut milk to help make these dairy free! Always check the box of pancake mix to make sure it is dairy free as well.
