Ingredients

  • 2 cups pancake mix like Bisquick
  • 2 teaspoons baking powder
  • 1 cup milk
  • 2 large eggs
  • 2 tablespoons oil
  • 1 teaspoon vanilla

Instructions

  • Preheat the oven to 350 degrees.
  • Line a half sheet pan with parchment or grease well with butter. Set aside.
  • Combine the pancake mix and baking powder in a large mixing bowl. Whisk to combine, about 15 seconds.
  • Add the milk, eggs, oil, and vanilla to the mix. Stir until fully incorporated, about 1 minute. It’s ok if there are a few lumps still in the batter.
  • Pour the batter into the prepared pan.
  • Bake 10 to 15 minutes, or until lightly browned and a toothpick comes out clean.
  • Serve warm with syrup or fresh fruit.
