Sheet Pan Pancakes

2 cups pancake mix like Bisquick 2 teaspoons baking powder 1 cup milk 2 large eggs 2 tablespoons oil 1 teaspoon vanilla
Preheat the oven to 350 degrees.
Line a half sheet pan with parchment or grease well with butter. Set aside.
Combine the pancake mix and baking powder in a large mixing bowl. Whisk to combine, about 15 seconds.
Add the milk, eggs, oil, and vanilla to the mix. Stir until fully incorporated, about 1 minute. It’s ok if there are a few lumps still in the batter.
Pour the batter into the prepared pan.
Bake 10 to 15 minutes, or until lightly browned and a toothpick comes out clean.
Serve warm with syrup or fresh fruit.
