Chicken Alfredo Stuffed Shells

Ingredients

  • 20 jumbo shells cooked
  • 2 cups shredded chicken
  • 3/4 cup ricotta cheese
  • 1 cup mozzarella divided
  • 1/4 cup Parmesan cheese
  • 1 egg
  • 1 cup finely diced broccoli
  • 2 cups Alfredo sauce*
  • salt and pepper to taste

Instructions

  • Preheat your oven to 350 degrees. Lightly mist a 9x9 dish with cooking spray.
  • Spoon 1/2 cup Alfredo sauce on the bottom of the pan.
  • In a large bowl combine the chicken, ricotta, 1/2 cup mozzarella cheese, Parmesan, egg, broccoli, and 1/2 cup Alfredo. Spoon into your cooked shells and place each in your pan.
  • Spread the remaining sauce over the shells and sprinkle with the 1/2 cup mozzarella cheese. Cover and bake 20 minutes. Uncover and cook an additional 10 minutes.
