Baked Bruschetta Chicken for Two

This Baked Bruschetta Chicken is an easy dinner that can be on the table in under 20 minutes! Made with just 5 ingredients: Chicken, sun dried tomato dressing, diced tomato, Parmesan, and basil!

Ingredients

  • 11 tablespoons Sun Dried tomato salad dressing* divided
  • 1 roma tomato chopped
  • 1/4 cup mozzarella or parmesan cheese shredded
  • 2 tablespoons basil chopped
  • 2 small chicken breasts

Instructions

  •  Preheat the oven to 350 degrees.
  • Stir together the tomato, cheese, basil and 3 tablespoons of dressing. Set aside.
  • For more even cooking, slice the chicken lengthwise creating two even sized pieces OR pound to an even thickness.
  •  Place the chicken into a glass baking dish. Pour 4 to 6 tablespoons of the dressing over the chicken being sure to cover the entire surface. Turn the chicken and repeat.
  • Bake the chicken for 15 minutes. Flip and top with each breast with the tomato mixture. Continue cooking an additional 15-20 minutes, or until the chicken reaches an internal temperature of 160 degrees.
