Ingredients

  • 1/4 cup butter
  • 3 tablespoons to 1/4 cup cornstarch
  • 2 cups broth or drippings
  • 1/2 teaspoon salt and pepper more or less to taste

Instructions

  • 1. Melt the butter in a medium sized pot. Whisk in the flour until smooth and combined.
    2. Add the 2 cups of broth or drippings, season with salt and pepper.
    3. Cook over medium heat, stirring with a whisk constantly, until the mixture is at a boil and thicker in consistency, about 2 minutes.

Notes

I always start with 3 tablespoons of cornstarch. If the gravy is too thin, mix 1 tablespoon of cornstarch more with some of the warm gravy until a paste forms. Whisk into the gravy and cook one additional minute.
