Blackberry Mojito Recipe

Ingredients

  • 1 cup sugar
  • 1 cup water
  • 1 lime zested
  • 1/2 cup fresh mint leaves divided
  • 1-2 limes cut into slices
  • white rum or coconut syrup
  • blackberries
  • ice
  • club soda

Instructions

  • Boil 1 cup of water with 1 cup of sugar until fully dissolved. Remove from the heat and stir in your lime zest with the 1/4 cup mint leaves. Cool to room temperature, strain, and refrigerate.
  • When ready to serve, place 2-3 blackberries into the bottom of a cocktail glass with 2 mint leaves. Squeeze 1 lime wedge into your glass and muddle with the back of a spoon.
  • Stir in 2 tablespoons of your mint lime syrup.
  • Top with ice, 1 shot of rum (or coconut syrup to taste), and club soda.

Notes

Make this in a pitcher: Muddle all of the blackberries, mint, and lime juice in the bottom of a pitcher. Stir in the rum and simple syrup. When ready to serve, fill with ice and top off with club soda.
Non Alcoholic Version: Leave out the rum but add a splash of coconut syrup.
