Grilled Chicken Fajitas Recipe

These are the best grilled chicken fajitas. The chicken is marinated for four hours and grilled to perfection. Served with soft cooked veggies and warm tortillas for the perfect dinner recipe!

Ingredients

  • 2 large chicken breasts
  • 1/4 cup + 2 tablespoons oil divided
  • 3 cloves garlic minced
  • zest of two limes
  • 3 tablespoons fajita seasoning
  • 1 onion
  • 2 peppers

Instructions

  • Slice your chicken breast in half, or pound to 1/4 inch thickness. 
  • Stir together oil, garlic, lime zest, and fajita seasoning in a large zip top bag or seal-able container. Add the chicken and marinade 4 hours or up to 8. 
  • Heat your grill to medium heat. 
  • Remove the chicken from the marinade. Cook on the heated grill for 2 to 3 minutes on each side or until the chicken comes to an internal temperature of 165 degrees. Remove and rest, covered.
  • Add the chopped vegetables to a heated skillet. Season with salt and pepper and cook for five minutes, or until soft. 
  • Slice chicken and serve with cooked vegetables and tortillas. 

Notes

No fajita seasoning? No problem! You can make your own by following this simple recipe. Bonus is that all of the ingredients are pantry staples! 
  • 1 teaspoon cumin
  • 1/2 teaspoon oregano
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1 teaspoon salt
  1. Whisk all of the ingredients together and add to your marinade.
