Ingredients

  • 1 lb chicken breast
  • 1/4 oil
  • 4 garlic cloves minced
  • 1-1/2 teaspoons Italian Seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • Zest of one lemon

Instructions

  • Slice the chicken breasts in half lengthwise, or pound to even thickness.
  • Whisk together the oil, garlic, seasonings, and lemon zest.
  • Place in a shallow dish or zip top bag with the chicken. Cover and refrigerate for 30 minutes, or up to 4 hours.
  • Preheat the grill to medium high heat.
  • Remove the chicken from the marinade and place on the grill grates.
  • Cook 6 minutes, per side, or until the chicken reaches an internal temperature of 165 degrees.
  • Let the chicken rest for a few minutes then serve.

Notes

TO FREEZE:
Cook the chicken according to the recipe. Cool completely. Place whole breasts, do not slice prior to freezing, into freezer safe zip top bags.When ready to enjoy, let thaw in the refrigerator before using.
