Preheat your oven to 300 degrees.
Combine the butter with both sugars in the bowl of an electric mixer. Stir on lowest setting for 3-5 minutes or until creamy.
Keeping the mixer on low, stir in the egg and vanilla extract.
Combine the flour, baking soda, baking powder, and espresso powder in a large measuring cup. Slowly stir into the batter.
Mix in the chocolate chips.
Spoon onto lined cookie trays. Bake 20 minutes or until the edges have lightly browned.
