Ingredients

Chicken Seasoning

  • 2 large chicken breasts sliced in half lengthwise to create 4
  • 1 tablespoon Italian Seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • salt and pepper to taste

Artichoke Dip Topping

  • 1 cup artichoke dip
  • 1 cup mozzarella cheese
  • 1/2 cup bacon crumbles optional

Instructions

  • Preheat the oven to 375°F (190°C). 
  •  In a small bowl, mix together garlic powder, onion powder, Italian seasoning, salt, and black pepper. Rub this seasoning mix all over the chicken breasts.
  • Heat olive oil or butter in a oven-proof large skillet over medium heat. Once hot, add the seasoned chicken breasts. Cook for about 2-3 minutes on each side, just until they start to brown. They don’t need to be cooked through at this point.
  • Remove the pan from the heat and spread a generous layer of artichoke dip over each chicken breast.
  •  Sprinkle the cooked bacon pieces (if using) over the artichoke dip. Layer your chosen cheeses on top.
  • Transfer the skillet to the preheated oven. Bake for about 15-20 minutes, or until the chicken is cooked through (reaching an internal temperature of 165°F) and the cheese is bubbly and golden.
