  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard optional
  • 1 clove garlic minced
  • 1/2 cup breadcrumbs
  • 1/3 cup Parmesan grated
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 large chicken breasts

Instructions

  • Set your oven to 350 degrees Fahrenheit.
  • In a shallow dish, mix together melted butter, oil, lemon juice, minced garlic clove, and Dijon mustard. Set this dish aside for later.
  • In another shallow dish, combine bread crumbs, grated Parmesan cheese, garlic powder, salt, and pepper.
  • Cut each chicken breast in half lengthwise or pound them to an even thickness so they cook evenly.
  • Dip each piece of chicken first into the butter mixture, making sure it’s well-coated. Then, press it into the breadcrumb mixture so it’s covered on all sides.
  • Place the coated chicken pieces into a 9×13 inch baking pan. Bake in the preheated oven for 30 minutes or until the chicken reaches an internal temperature of 165 degrees Fahrenheit.
