In a small saucepan, combine 1 cup of water and 1 cup of granulated sugar. Bring to a boil, stirring occasionally, until the sugar fully dissolves.
Remove from heat and immediately stir in 1 tablespoon of lime zest and 1/4 cup of fresh mint leaves. Let the mixture cool to room temperature.
Once cooled, strain out the solids and transfer the syrup to a jar or bottle. Refrigerate until ready to use.
Drink Assembly
In a cocktail glass, add 2 to 3 fresh blackberries and 2 mint leaves. Squeeze the juice from one lime wedge into the glass. Using the back of a spoon or a muddler, gently press the ingredients to release the juices and flavors.
Stir in 2 tablespoons of your prepared mint lime syrup.
Fill the glass with ice. Pour in 1 shot (about 1.5 oz) of white rum or coconut syrup for a non-alcoholic version. Top off with club soda and give it a gentle stir. Garnish with extra mint or blackberries if desired. Serve immediately.
Notes
Make this in a pitcher: Muddle all of the blackberries, mint, and lime juice in the bottom of a pitcher. Stir in the rum and simple syrup. When ready to serve, fill with ice and top off with club soda.Non Alcoholic Version: Leave out the rum but add a splash of coconut syrup.
