A sweet, crunchy snack mix coated in white chocolate and tossed in a cinnamon sugar blend. This churro-inspired puppy chow is easy to make and completely addictive.
Line a large baking sheet with parchment paper or foil. Set aside.
Add the Chex cereal and Cinnamon Toast Crunch to a large bowl. Gently toss to combine.
In a large zip-top bag, combine the powdered sugar, granulated sugar, 1 teaspoon cinnamon, and a pinch of salt. Seal and shake to mix. Set aside.
Melt the white chocolate chips according to package directions (microwave in 30-second intervals, stirring between each).
Stir in the shortening (or coconut oil), vanilla extract, and remaining 1 teaspoon cinnamon until smooth.
Pour the melted chocolate over the cereal mixture. Gently fold until evenly coated.
Transfer the coated cereal to the prepared zip-top bag. Seal and shake well until fully coated in the cinnamon sugar mixture.
Spread onto the prepared baking sheet in an even layer. Let sit 15 to 20 minutes, or until set.
