Patriotic Poke Cake

This Red, White, and Blue Poke Cake is an easy patriotic dessert made with cake mix, colorful gelatin, and a fluffy whipped topping. Perfect for Fourth of July parties, Memorial Day cookouts, and summer celebrations.

Ingredients

  • 1 box white cake mix plus ingredients called for on the box
  • 1 (3.3 oz) box red gelatin
  • 1 (3.3 oz) box berry blue gelatin
  • 2 cups boiling water divided
  • 1 cup cold water divided
  • 1 (8oz) container cool whip thawed
  • sprinkles optional

Instructions

  • Prepare and bake the cake in a 9x13-inch baking dish according to the package directions. Allow the cake to cool completely.
  • Using the handle of a wooden spoon, poke holes all over the cooled cake.
  • In a medium bowl, whisk together the red gelatin and 1 cup boiling water until completely dissolved. Stir in ½ cup cold water.
  • In a separate bowl, whisk together the blue gelatin and remaining 1 cup boiling water until dissolved. Stir in the remaining ½ cup cold water.
  • Slowly pour the red and blue gelatin mixtures into the holes, alternating colors throughout the cake. Don't worry about making a perfect pattern.
  • Cover the cake and refrigerate for at least 4 hours, or overnight.
  • Spread the thawed Cool Whip evenly over the top of the cake.
  • Garnish with patriotic sprinkles, if desired.
  • Slice and serve chilled.
