Ingredients

Mint Syrup

  • 1 cup sugar
  • 1 cup water
  • zest of 1 lime
  • 1/4 cup fresh mint leaves

Cocktail

  • 1/4 cup mint leaves
  • white rum, or coconut syrup
  • strawberries washed and sliced
  • ice
  • club soda

Instructions

Mint Syrup

  • Combine the sugar and water into a small saucepan and bring to a simmer. Cook until the sugar has dissolved completely, about 1 minute.
  • Remove from the heat and stir in the lime zest with the 1/4 cup mint leaves. 
  • Cool to room temperature, strain, and refrigerate.

Cocktail

  • Place 2-3 strawberries into the bottom of a cocktail glass with 2 mint leaves.
  • Squeeze 1 lime wedge into the glass and muddle with the back of a spoon.
  • Add 2 tablespoons of the mint syrup.
  • Top the mixture off with ice, 1 shot of rum, and club soda. Enjoy!
