Ingredients

  • 1 cup butter softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs + 1 egg yolk
  • 2 teaspoons vanilla extract
  • cup all-purpose flour
  • 2 teaspoons cornstarch
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg

Topping:

  • 1 tablespoon granulated sugar
  • 1 tablespoon cinnamon

Instructions

  • Preheat the oven to 350 degrees. Line a 9x13 pan with parchment paper and set aside.
  • Combine the butter and sugar in a mixing bowl. Mix until combined and slightly fluffy, about 2 minutes.
  • Scrape the sides of the bowl and add the eggs, egg yolk, and vanilla. Continue to mix until fully incorporated, about 1 minute.
  • In a separate bowl, whisk together the flour, cornstarch, baking powder, salt, cinnamon, and nutmeg.
  • Stir the dry ingredients into the wet ingredients until just combined.
  • Spread the batter into the prepared pan.
  • Combine 1 tablespoon of sugar with 1 tablespoon of cinnamon. Sprinkle evenly over the top of the batter.
  • Bake 25-30 minutes or until a toothpick inserted in the center comes out clean.
  • Cool and enjoy.
